miso lime & ginger fried rice

I make this quite often, when I don’t fancy noodles but when I want something hearty and properly more-ish, that also happens to have rice in it. This one is quite nice. Sort of tastes like teriyaki, sort of like fried rice, also done in less than 15 minutes.

SERVES 2 PEOPLE

 

4 min prep + 10 min cooking = 14 minutes


INGREDIENTS:

  • 4 spring onions

  • 100g tenderstem broccoli

  • a block (280g) extra firm tofu

  • 80g frozen peas

  • 250g cooked basmati rice (in a microwaveable pouch)

  • 2 tbsp dark soy sauce

  • 1 tbsp agave syrup

  • 1 tbsp sesame oil

saucy stuff

  • 2cm ginger

  • 2 tbsp agave syrup

  • juice of 1/2 lime

  • 3 tbsp sesame oil

  • 1/2 tbsp red miso paste

  • 50ml hot water

METHOD:

  1. Hello. let’s work on our tofu. Chop it into nice bite-sized cubes, then throw in a bowl with the dark soy sauce, agave and sesame oil. Pop that in a fryer of air or an oven for 10 minutes.

  2. Meanwhile, chop up your spronion and broccoli into nice slices. Fry them off in a large frying pan with a little bit of oil on a medium heat. You want everything nice and golden and the broccoli to be cooked all the way through.

  3. Okay now the saucy stuff. Grate the ginger up then pop that Ron in a jug along with the other saucy stuff (listed above). Mix well and season to taste.

  4. Now the combining of absolutely everything. In that frying pan, chuck in the tofu, the peas, the miso lime ginger sauce, and the cooked rice, along with a splash of some hot water. Crank the heat up and stir until the water reduces. After about 2 minutes, you should have cooked fluffy rice and the peas should be cooked too. That’s it really.

  5. Oh yeah, flourishes. Top your rice with some more lime juice, maybe some crispy chilli oil, maybe even some of those green bits of the spronions, or some sesame seeds. You do you, speak your truth.
