8-minute noodles

noodles done in 8 minutes. I did a vegan cookbook with 20-minute filling recipes, yet this still works and is just as mad.

they’re meaty, they’re perfect for when you’re craving something satisfying and above all, they pack a whole load of umami goodness that’ll make you see “ooeeooahahtingtangwallawallabingbang”.

SERVES 2 PEOPLE

 

2 min prep + 6 min cooking = 8 minutes


INGREDIENTS:

  • 120g soy mince (i use Vivera)

  • 2 garlic cloves

  • 2cm ginger

  • 1 spring onion

  • 3 tbsp dark soy sauce

  • 1 tbsp agave syrup

  • 1 tbsp mirin

  • 1 tsp crunchy peanut butter

  • 1 tbsp sesame oil

  • 1/2 tbsp crispy chilli oil

  • 1/2 tsp MSG

  • 125g medium thread noodles

  • pinch of sesame seeds

  • juice of 1/2 lime

METHOD:

  1. Get your noodles in a bath of boiling water. It basically means pop it in a saucepan. Cook the noodles for 3 minutes until they’re all softened.

  2. Meanwhile, chop up your garlic and ginger roughly and the spring onion into slices. Leave them to the side.

  3. In a large frying pan, fry the soy mince in a tablespoon of veggie oil on a medium/high heat. Once crispy, add just the garlic, ginger and the sauce ingredients. Lower the heat, stir until everything’s coated. Now save some noodle water (around 30ml) and drain the noodles.

  4. Throw the noodle water into the mince, and stir until it reduces and becomes saucy. Throw in the noodles too please, and toss everything together. Serve it from the pan and top it with the spring onion slices, sesame seeds and some lime.
