the best oven-roasted chips
these are the best oven chips you’re gonna see this year. I can guarantee it. Me and @ellysplate have smashed it out of the park with this one.
Oh yeah, this recipe just so happens to be vegan. It’s potatoes innit.
MAKES ENOUGH CHIPS FOR 3-4 PEOPLE
10 min prep + 35 min cooking = 45 minutes but my god is it worth it
INGREDIENTS:
1kg Maris Piper potatoes (or 2-3 medium-sized potatoes per portion of chips)
4 tbsp flaky sea salt
handful (10g) fresh rosemary
handful (10g) fresh thyme
good-quality vegetable oil
METHOD:
PREHEAT YOUR OVEN TO 200°C AND YES THIS IS ALL CAPS BECAUSE YOU WILL FORGET TO DO THIS IF IT’S NOT.
Wash the potatoes, then chop into chip-shape rectangles with the skin left on. Once that’s done, boil in salted boiling water for 8 minutes. We call this parboiling, for some reason, but we do it so we get extra fluffy chips on the inside.
Whilst they’re boiling, pop the salt in a pestle and mortar or a spice grinder. Remove the herbs from their stalks (if thyme is in season, you can leave the stalks on as they’re not tough), and bash the salt with the herbs together until you’re left with a properly herby salt. Also, while you’re up, pop some veggie oil in the bottom of a roasting tray until the bottoms covered and heat for 5-10 mins in the oven to get it piping hot.
Once cooked through, drain the potatoes and pat dry with kitchen roll. Take the tray out carefully and then place the potatoes gently in the hot oil. Cover with some of the herby salt (not all of it) and roast in the oven for 20 minutes.
Carefully take out the tray after 20 minutes of cooking and flip each potato over. Salt the chips a little once more and roast for another 15 minutes.
Those are your chips. Hello chips. I hope you do that. I hope you say “hello chips” when you complete cooking them. Anyways, serve with a burger, dip in aioli and you’re good to go.
TIP: If the tray is too oily when you take out the chips at step 5, then drain any excess oil carefully in a bowl, let it cool, and dispose in food waste.
