healthy tofu tacos
these healthy tofu tacos are essentially gonna be a go-to for some quicker, fresh tacos.
high in protein, 20 mins to make, and actually a lovely little banger
SERVES 2 PEOPLE
5 min prep + 15 min cooking = 20 minutes
INGREDIENTS:
1 block (280g) of smoked tofu (i use Tofoo)
1 tsp smoked paprika
1 tsp cumin
1 tsp oregano
2 limes
5 tbsp plant-based plain yogurt (I used Oatly)
1 garlic clove
Handful of coriander (half for yoghurt, half for finish)
1/2 cucumber
3 tbsp apple cider vinegar
1 tbsp maple syrup
Salt
2 white or corn tortilla wraps
Hot sauce
METHOD:
Get an oven (or an air fryer if you must) and pop it at 200°C. Chop the tofu into cubes then throw it into a large bowl with the spices, a drizzle of oil, and 1/2 lime’s juice. Bake for 15 mins.
Whilst that’s cooking, slice your cucumber thinly and add to a jar with the vinegar, the maple, 1/2 lime’s juice, and a pinch of salt. Stir, then let it pickle, and leave it to the side, or the naughty step if you wish.
We then do something nice. Grate the garlic clove in a small bowl and stir in the yogurt, a pinch of salt, 1/2 lime’s juice until combined and smooth. Chop up a pinch of fresh coriander and whack that into the sauce as well.
Take your tortillas and a cookie cutter (around 10cm diameter) and cut circles out of the tortilla, you should get 2-3 shells each wrap. Toast on a frying pan without oil on a high heat for 30 seconds each side until warmed and slightly browned.
Serve up your tacos. Garlic sauce on the bottom, then tofu, then cucumber, and hit it with the hot sauce, more lime? Yeah go on, and some strands of fresh coriander. BOOM.
