GORGEOUS VEGAN PASTA BUT ONLY 7 INGREDIENTS ???? YOU’RE HAVING A LAUGH

Yeah make this super green pasta, with 7 ingredients, that’s actually 7 ingredients. It’s a proper lovely dish.

You might be thinking, why 7? Why not 5 ingredients like everyone else? I feel like seven is the realistic number of ingredients you need to make a great vegan dish relying solely on those ingredients to deliver. The only things you need are salt, pepper and oil, which everyone should have or if not get. And 7 is my lucky number so yeah have that.

SERVES 2 PEOPLE

 

5 min prep + 10 min cooking = 15 minutes


INGREDIENTS:

  1. 200g tenderstem broccoli

  2. 200g rigatoni

  3. 150g baby spinach

  4. 300g (carton) silken tofu

  5. Juice of 1 lemon (half in sauce, half to finish)

  6. 5 tbsp nutritional yeast

  7. 20g fresh basil (half in sauce, half to finish)

METHOD:

  1. Rigatoni. Put that in a large saucepan on a high heat with boiling water. SALT your water. Then cook according to your packet instructions please.

  2. Chop up the broccoli then chuck in a large frying pan with light olive oil on a medium heat. Once it’s softened, pop your spinach inside and watch the magic how you pop all that spinach and it reduces to absolutely nothing.

  3. Add the broc and spinach to a food processor along with the rest of the ingredients, including half of the lemon juice and basil, and blitz until smooth.

  4. Before you drain the pasta, keep back some pasta water by getting it out with a mug. Around 50ml works.

  5. Drain the pasta, pop the pasta back into the saucepan and mix in the green sauce and pasta water. Lower the heat of the saucepan and keep stirring until you get proper creamy green and mean-covered pasta.

  6. Serve with lemon juice and loads of salt and pepper. You’re welcome.
