creamy harissa tofu sandwich filler
Em The Nutritionist is diamond for getting me onto prepped healthy sandwich fillings. she hasn’t done a plant-based one, so i’m taking the reins on that.
SERVES ENOUGH 3 SANDWICHES
5 min prep + 20 min cooking = 25 minutes
INGREDIENTS:
1 block (280g) extra firm tofu
1 tsp smoked paprika
1 red pepper
baking paper (if you’re using an oven)
300ml carton of silken tofu
Juice of 1/2 lemon or 1 tbsp apple cider vinegar
3 tbsp nutritional yeast
2 1/2 tbsp rose harissa paste
Pittas to stuff your sandwich filling in
1 tomato, to serve
1 little gem lettuce head, to serve
1 avocado, to serve
METHOD:
Take your tofu and chop that into tiny little cubes, then deseed the pepper and chop that into tiny little cubes just like the tofu. You then need to pop it on a lined baking tray (if you’re using an oven). add the paprika, oil, salt and pepper and mix them all together. Cook those for 20 minutes in a 200°C oven. Or for your air fryer, mix the paprika, oil salt and pepper in a bowl, then add directly into the air-fryer basket and cook for 13 mins at 200°C.
In a food processor, yes that thing again, we’re gonna add our silken tofu, harissa, lemon juice (or ACV) and nutritional yeast, and blitz to your hearts content, until it sort of looks like a harissa mayo. When you have that, season it to taste.
Now you should have some free time, don’t sit on your phone and watch highlights of Breaking Bad like I did, go prep the bits you would like in your sandwich, and slice your pittas open too. I’ve gone with lettuce tomato and avocado, but this bit is entirely your call.
Once the tofu and peppers are roasted, add them and the harissa sauce into a large mixing bowl and mix them all together, you get the best of both worlds; creamy harissa with crisp peppers and tofu, it’s a beauty.
Stuff your pittas with the harissa tofu and toppings, you’ll serve 3 of them, and wrap up the ones you don’t want to eat now. Then devour one when you’re ready, they will last 3 days once assembled but the filling will last 5 days in an airtight container.
